Egg and Tomato Stew (Nkrakra Nkoaa)

  • 4 hard-boiled eggs
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons vegetable oil1 can (14 oz) crushed tomatoes
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish


  1. Heat oil in a pot and sauté onions, garlic, and ginger until softened. Add bell peppers and cook until slightly tender.
  2. Stir in tomatoes, paprika, cayenne (if using), salt, and pepper. Simmer for 15 minutes.
  3. Gently add the hard-boiled eggs to the stew. Simmer for an additional 5 minutes to warm them through.
  4. Garnish with cilantro and serve with rice or bread.
